Lots of plants will grow well in plain gravel. Also you can get fertiliser tablets to push into the gravel for those plants that need it.
If you do choose active substrate you are right that you can presoak it to get the ammonia out before use.
They are good for all-black angelfish which can suffer from dietary deficiencies due to making the extra black pigment (melanin).
I don't know of any particular benefit to other fish.
If the tank is well-established there could well be enough microscopic life to feed them until they are big enough for your banana worms etc.
If you have a water butt, or a fish-free pond, you could take some water from there to add some micro-food. Balance the water temperature to match the...
