How can I calibrate this ph meter?

You need to purchase pH calibration fluid 4.1 and 7.1

You did not specify the brand so we do not know what user manual to use. Normally the machine has a calibration procedure, i.e a button to press while the probe is sitting in the fluid. If it doesn't have instructions or if it doesn't have a calibration procedure then you should simply take readings at the two endpoints and draw a line between the two. This will give you a rough correction curve, but there really should be a calibration function on the box.

I have an ORP meter that looks practically the same as that, so assume it is from the same company. If it is anything like that, it is a single point adjustment only by a screw on the side. Did it come with an adjustment screwdriver? Assuming that is the case, you can do is buy a single calibration fluid closest to the value you expect to measure. You can then adjust it for that. The further you are away from that value, the greater the possible error is, but it would probably be close enough.
 
When I place the sensor into the aquarium water the meter goes wild from 1.55 to 6.33 then 2.45 then 8.90....it never stabilises at a single reading...why?
