I know it's best to turn CO2 on about an hour or so before lights go on, so it's well distributed and ready for waiting for plants when they start photosynthesising, but does the same apply for adding fets to a tank?

Not really, CO2 takes time to build up, ferts are immediate. Although it might take up to an hour or so for entropy to ensure they are equally well mixed. Personally I dose daily well before the lights come on.

I tend to do it when I get up as a routine, that way I wont forget... Am considering sorting a dosing pump linked to a timer to be the ultimate lazy b'stard 😉

It doesn't matter. Dose when it is most convenient for you.

Cheers,
