Stocking - What would like the cave ?

Planning ahead I want to start thinking aout the fish that will eventually occupy the tank.
It is a

Juwel Trigon 190 Aquarium 190 Litres, Filtration Eheim 2178 Professional 3e 600T Thermofilter
Planted and with daily CO2 = Water Hardness of 14 DH
Understand we dont fully stock on day 1 and I wont be starting for a least a month when there will be a lot more growth.

Whilst setting this up I inadvertanly created a cave, see the picture

so though I may add a fish or fishes that would appreciated this and then stock around it, hope that makes sense

Labidochromis ? Perhaps one,with shoal of Celebs rainbow's or other rainbow's considering GH.
Wondering if rocks are maybe contributing to GH?
Or is GH same as or close to source water ?
Might would not attempt soft water fishes were it me.

Will need to treat and soften water used for water changes ahead of time if altering the water within the tank to much different than source water.
Otherwise it could be tough on osmoregulatory function's of fishes therein.
Much easier to select fishes that will thrive in source water than manipulating water to suit fishes.
