I'm trying to get my stem plants to grow taller and wanted to know if trimming the tops helps??

If so how much would you take off??

The less light and the higher water level you have, the more taller your stem plants will grow (assuming there is enough ferts to allow that) - they will try to reach as much light as possible.
The main reason most of the plants are growing upwards is a need to reach the sun/light as it gives them energy to reproduce (without going into too much details) - and what I've observed is they're just trying to reach the water surface as quickly as possible - then the flowering/pollination etc starts.

Simply trim your plants just above every node:

How much to trim is a rather personal matter (I usually trim any stems at around 30-50% of their height and re-plant the trimmed off stems with top buds being removed - this helps with multiplication of any new stems like trimming above node does) - you can form them in a way of carpets/fields etc, have lower, higher areas of plants and so on.
