As for keeping fish with shrimp as a general rule if the fish can fit the shrimp in it's mouth they will eat it. Shrimp and crustaceans are a staple diet for most fish.
Adult Amano are big so they should be fine, but you'd need plenty of hiding places in the form of plants, rocks, moss, shelters etc if you wanted to establish a breeding colony of cherries.
