recently purchase 3 x pots of the above plant and the have been sitting in the tank in the pot for a week now. I want the plants to bush out - so I am ok in cutting these plants in half, just above a set of leafs so side shoots will appear.

The portion of the plant I have cut off remove the lower set of leaves and plant in rock wool to gain more plants.

Please advise.

absolutely fine...i found these plants grow like weeds but need good lighting to produce the pink veined effect.

I bought about 3 pots of this plant about 3 years ago and it's still going from those original 3 after taking loads of cuttings. I just chuck my cuttings in the aquarium gravel or sand and they root quite happily. I have a big clump of it floating in my guppy tank too which gives a bit of refuge to the babies.
