Is there a way to keep this plant dwarfed? Ideally without uprooting.

Trimming the old leaves should be all that is needed. You can keep it at whatever size you like then.
You can remover outer leaves by peeling down to approximately 3 inches above the substrate.
You don't want to go down any further than that, as a new leaf will emerge from under the remaining part of the leaf you have removed!
