Breaking down my big tank, but keeping filters would the 600 be considered to powerful for a 60p nature aquarium maybe with spin pipe would be ok?

As long as you can control your flow so things aren't blowing around e.g. using a spin pipe like you said, it'll be just fine. The more filtration capacity the better!
I am using Fluval 407 and 307 in my 60x45x40 tank with Lily Pipes. No issues.
In UKAPS I believe it is often said that the more flow the better" (especially to the substrate level) and "plants are the filters" 🪴🪴🪴
I use the 600 on my 60p and it's fine.
I used a reducer to fit the smaller 13mm lily pipe outflow and you can also reduce more on the filter itself too
I have the 250 in my 55l sparkling gourami tank and the flow was too strong. I changed the pipes to 13mm and added the Aquario Neo Reliever outflow with a skimmer.
Now it's perfect.
