Leaf shape looks similar to Rotala "colorata" that I have, and colour range is similar. Looks nothing like my Rotala "green" which has much smaller and sharper leaves.

Yeah, I highly doubt you want to be using a fertiliser containing nitrate. If anything you want to use RO water to reduce nitrate.

pH and nitrates super high. I think your fertiliser has nitrate so stop dosing it and get one without nitrate. Definitely don't do full EI as that also adds nitrates. Test your tap water and see what the levels are. These are general comments and not specific to your plants symptoms but I doubt...

I have lots of Anubias and Crypts in my aquarium with Cherry Shrimp. I had like 15 since like months ago and they are not breeding. I think half-ish have died. But wouldn't they all have died?

Echinodorus tenellus I think. It grows using runners and I have some.
