What age are your shrimp? Lots of reasons why shrimp might die in a newish home. Younger shrimp are definitely at risk from hydra, they can grab and kill juvies. Mature shrimp are, as far as I know, mostly unharmed by by hydra though they do sting them and may stress them into dropping eggs...
You seem to have hydra and staghorn algae. Worth looking at images and verifying to be sure.

Yeah as @tam says - grey is usually stress (and I find old age). I find that my Embers usually recover from this in time and anything that can be done to allow them to de-stress is useful. For me this usually means staying away from the tank for anything other than the necessary water changes...
I have a canary camera that I point at my tank and can watch from my phone remotely. Also have a nest camera that watches mover the main room so I can track target scale changes.
I use egg crate under substrate mostly to stop sharp rocks scratching or cracking the glass while scaping. It is also helpful in providing a bit of a foundation to scape substrate features.

Providing lots of hiding places and a shortterm drop of water level usually helps mine settle. Worth checking water - especially TDS, PH and oxygenation.

It's looking great! I've been running a smaller 30x30x30 ADA (the aquarium that I adopted) but I've been wondering about moving up to this size (your 60x45x45). I think your scape has convinced me. :)
