Krissy. I have seen your plants on APC and TPT. Quite a nice collection. I just have a ton of bucephalandras on the rare side. Some rotalas but none that hard to find. Will try to get p.helferi wicked from OK. My p.helferi tc keeps melting on me. :(

30 days for the eggs to hatch, they should be fertile if you are seeing your shrimp holding them. I wont say soon runover by them. More like in 8-9 months. Then you can add in a betta or some other big enough fish to keep them in check.
IMO plant heavily from the start and do major water changes every 2-3 days. I wouldn't suggest minimal light period, instead you can do seista period. 2 hours on, 2 hours off and so on. Dosing of excel will help too.
The tank was supposed to be a buce heaven with a foreground of monte carle, hairgrass and H.tripartita. Then I got a deal of plants and didnt know what to do with them. So this is what it turned to. Soon I plan to dismantle it, move all the stems in a grow tank and go back to making it a buce...
If not wallichii than maybe nanjeshan can do the trick. Though I would move Alternanthera on back of nanjashen. How about bit of P.Helferi around the wood corners for midground accent? Oh and Some Java fern thread leaf to blend in the bolbitis.
Nice! How about you move Blyxa to back and have something like rotala wallichii infront of it? Maybe some anubias nana on the base of wood. That would work well as the nice midground plant and will contrast well with your light green foreground.

You can check out Tom Barr's video on trimming Monte Carlo. He trims it to the bare roots and they grow out fine. That's what I do too. Though mine is tied on branches of wood.
I don't think your anubias is suffering, just a slight bit of green spot algae. Weekly water changes or slight dosing of micro ferts and excel will surely give it a boost as well as keeping algae in check.
Here is the full photo. The lights are DIY epistar 65 x 3W leds. 4 channels. On from 6am to 11pm with 3 x 2.5 hours off (siesta period). Pressurized co2 injected through the Powerhead+filter (1800L/Hr), 5bps. EI dosing. 50-60% water change weekly.
