It Depends on what type of cover u r using...
If u use nets there will never b any problem ...but it may b an eye sore...
Perhaps u may take a look at this video by Dennis .. i defuse high co2 in tank n rely on maximum air exchange to gas out...
Yep its fustrating ...i feel exactly what u r saying....
But covering a tank with pressurized co2 posses greater threat....if covered there will b less air exchange which can b fatal for ur fishes.... I tried adding a sleak...
Wanted to add....once ur tank is filled with plants n lush green......fish normally wont jump...
Please find below my tank...after ut matures none of my fishes jumped out of it...they prefer to hide if spooked .

What is the KH .... I believe u r getting PH shock at night when no light , more co2 n resulting flactuation in PH ...it may go below 5 ....
PH 5.5 is quite low as well

Discus r bred n bought up these days in bare bottom tanks .... So they may need some time to get used to in planted tanks....
Also discus prefer in group...so ill suggest to keep 4 or more ..so they...
I would go for cardinals.... If u want tightly schooling fish then Pristilla maxilaris u can consider as well ..;...

Go for Ember tetra or cardinal ....even though they dont school tightly cardinals r n always will b king among tetras

No2 is the killer here.... I haven't used that product u r referring so cant tell.... Use some product which detoxify no2 n nh3 both....

What u have done is complete restart... Changing substrate means the complete disruption of ecology which was present for three years......
Ill suggest to keep those fishes in separate tank for few weeks till initial cycle is established...
Tank looks excellent to me..... Will suggest to add more anubias and fern ..... About the fish stock, i think u can consider a big school of ember tetra.... U can increase the count to 20 it should b fine .......
Again tank is nicely scaped..... And plan...
